Thanks to Sam May’s initiative, here’s a hint from Tim Brownell about how the farm to camp food project has been going at Camp Manitou this summer. This success is due to a team effort with camp owners and staff, farmer Trent Emery, Crown O’ Maine truck distribution company and David Gulak of Barrels Community Market. Yay team!!!!!!
“Just wanted to offer you all a quick update now that our campers have been here for 4 full days (which feels like weeks at this point).
We have Trent’s lettuce greens fully integrated into our salad bar now. The staff and campers are blown away by the difference. “I actually love veggies now” was an overheard the other day! We also have his cukes and green peppers in our salad bar, too
Trent brought over summer squash and zuchini which the chefs cooked (delicious) and peas which they also prepared, so we’re all good there.
Still using Northcenter carrots and tomatoes (sounds like they may not be fully in season yet). We’re hoping to contact Marada to perhaps supplement there….
Our chefs are very open to the menu change – they’ve been great, although they are currently concerned about space in our large refrigerator to store all the greens coming in. Jon is looking into expanding with another cooler.
The veggie garden is coming along extremely well and the kids love it – they built scarecrows wind chimes and pin wheels as an activity because we had a small gopher problem.
We’re doing some composting, too – mostly just saving veggie scraps because we don’t have a compost pile – and pig farmers have been coming by for the scraps.”
